This Colombian single origin coffee goes through a decaffeination process using an ethyl alcohol derived from a mix of acetic acid (vinegar) and natural extract distilled from sugarcane juice.  

The green coffee beans are steamed and then soaked in this sugarcane-derived solution in which the ethyl acetate binds to the caffeine molecules, drawing it out from the coffee beans. The coffee beans are then removed from the now caffeine-rich sugarcane solution. 

What's notable about this process is its sustainability. The extracted caffeine-ethyl acetate mixture can be processed to separate the caffeine from the ethyl acetate, making it possible to recycle and reuse the ethyl acetate for future decaffeination processes.
