An outstanding decaf. Our Colombia decaf coffee uses an organic compound derived from sugar cane to remove the caffeine from the coffee bean.
The Cooperativa de Caficultores de Anserma (Co-op Anserma for short) connects farmers across the municipalities of Anserma, Belalcazar, Risaralda, San José and Viterbi. The coop lies in Colombia’s Coffee Triangle - Eje Cafetero, the heartland of Colombia’s coffee industry - responsible for a significant portion of Colombia’s total coffee production.
The decaffeination process uses a mix of acetic acid (vinegar) and natural extract fermented from sugarcane juice. Â
The green coffee beans are steamed and then soaked in the sugarcane-derived solution in which caffeine is removed from the coffee beans. The coffee beans are then removed from the now caffeine-rich sugarcane solution.Â
What's notable about this process is its sustainability. The extracted caffeine-ethyl acetate mixture can be processed to separate the caffeine from the ethyl acetate, making it possible to recycle and reuse the ethyl acetate for future decaffeination processes.
